So what do you eat?

This is a question I am getting a lot these days. To be honest, It’s been difficult to come up with recipes but yet very easy. I am finding lots of recipes from “The Autoimmune Wellness Handbook” Even if you are not on this diet I recommend every recipe we have tried so far. They are delicious . We have tried the Butternut Breakfast Bake, Balsamic Beef Stew (with deer), Thai Seafood Chowder which was my favorite so far, Hidden Liver Chili (minus the liver because I was too tired to find it in the freezer), Steak Salad with Spring Veggies.I am also finding recipes from https://autoimmunewellness.com/recipes/

Last Night we had a Butternut Squash Chicken Curry and made an AIP version of NAAN that was pretty good after we toasted it more. The kids loved the Curry but the Naan was just ok to them. I thought it tasted pretty good but did take a long time to make. It was like making pancakes that take forever to cook. The curry was made in the instant pot and after a few meltdowns on my part due to it burning in the instant pot and because I’m an emotional wreck at times and some help from my husband, we had a meal that I would like to make again.

For lunch today, my sweet friend brought us over a squash soup that actually fits into my diet. We are enjoying it with a quick bread that I made in the microwave and toasted quick. I have had this in the past but have forgotten about it until today. Thank you Katie for lunch!

Sunday we hosted our Parenting Group with desserts. I made two AIP friendly desserts and I heard good reviews. I really enjoyed the blueberry tart. The apple spice cake was good but more like a flat banana bread but very tasty.

For the most part we are eating mostly meat and veggies. We are learning more about the different types of flours (Cassava, Arrowroot, Tigernut, Coconut, and more). I find that there is a high use of Coconut milk and other coconut type things (butter, cream, yogurt). I am having to restock my pantry with new items so I expect my kitchen to be rearranged a bit in the next few weeks to try to accommodate these new items. I get frustrated easily when i don’t have the correct item or if something goes wrong. I think a lot of that has to do with being exhausted and overwhelmed with trying to figure out what i should or shouldn’t be eating. I just need to remind myself to take one meal at a time, one day at a time. I am still not having much for pain which I am so grateful for, and pray that it stays that way.
